CABBAGE KI SABZI


Healthy, easy and tasty side dish made with only a few dry spices and cooked with tomatoes. Its perfect to have with roti or as a side dish with rice. 

Yet another simple and quick recipe for those who don't want to spend more time in kitchen but still want something yummy.



Cabbage is packed with nutrients. It is rich in vitamins and minerals. it also improves digestion. These are a few I have mentioned but there are many other benefits too. People who don't like to eat raw or boiled cabbage(like me😛), this recipe is perfect for them. It's not made with heavy masala and is not bland either.




Firstly, saute cumin seeds in a little oil. Then onions need to be fried till transparent. We only use red chili powder and turmeric powder, no other spices to be used. Then add tomatoes, once they are soft add in the sliced cabbage, salt and a little water. One can use a pressure cooker to speed things up.

INGREDIENTS
200- gms of cabbage sliced
3-4 teaspoons of oil
1/4-1/2 teaspoons cumin seeds
1 medium onion sliced
2 medium tomatoes chopped
1/2 teaspoon red chili powder( or according to your taste)
1/4 teaspoon turmeric powder(haldi)
Salt as to taste

METHOD

1. In a non stick kadai or a pressure cooker heat about 3-4 teaspoons oil. Once the oil is heated. Add cumin seeds. Once it splutters add sliced onions keep the flame to medium. Fry till the onions are soft and transparent.







2. Reduce the flame to low and add red chili powder and turmeric powder and saute for 1/2 min. At this point add the tomatoes.




3. The tomatoes should be soft in 5-8 mins on medium flame. Add the sliced cabbage, salt and 100 ml of water or as required. Since I made it in a kadai, it took me 10-15 mins. If your using a pressure cooker then 3 whistles should be sufficient. If you want the cabbage half cooked then you can reduce the cooking time. So its all up to your taste and like.


4. When it's getting cooked, you can see this beautiful color combination of cabbage and tomatoes.
Once the cabbage is cooked, check for seasoning and water. If there is plenty of water, then keep the lid open and increase the flame to high steering continuously till the water has dried up. Serve hot the roti or as a side dish with rice.
