CREAMY MAYO MACARONI


Creamy mayo macaroni is made using fresh veggies, mayonnaise, herbs, chili flakes and tomato ketchup which gives it a creamy texture and tangy taste. 

I usually want something nice and tasty for breakfast or when I'm hungry, easy to make snack. This macaroni is perfect at such times. You don't have to spend more time making sauce and probably your not hungry by the time it's done right!!! 



In this recipe you can use any number of veggies u want like, carrot, bell pepper, baby corn etc. or any type of mayonnaise. Home made, any flavor or just the classic mayonnaise, it's your choice. It's not a spicy dish, so if you have kids, they are gonna love it ๐Ÿ˜‹(My kid does). The use of mixed herbs will give this macaroni an added flavor which you will absolutely love. When the macaroni is ready, you will have a delicious looking meal which tastes even more delicious than it looks!!!

INGREDIENTS
3 cups boiled macaroni(1cup=160ml)
3-4 teaspoon oil
1 medium onion chopped
1 carrot chopped or diced
3-4 tablespoon mayonnaise
1/2 teaspoon mixed herbs(Oregano, Basil, Thyme,Parsley and Garlic)
1/2 teaspoon chili flakes
Salt to taste
2 tablespoon ketchup

METHOD

1. Boil macaroni with 1 teaspoon salt. Meanwhile prepare the sauce. 

2. In a non- kadai, add 3-4 teaspoon oil. Once the oil it hot, reduce the flame and add chopped onions. Saute until transparent. Next add chopped carrot or any other veggies and saute for few mins on high flame. 

3. Turn the flame to low and add 3-4 tablespoon mayonnaise and give it a good mix. (If you want the macaroni to be more creamy you can add more mayonnaise). Add a little bit water to give it a medium consistency. Add mixed herbs, chili flakes, tomato ketchup. a little salt(since mayonnaise and mixed herbs contain salt. You don't want it to be very salty) and mix it well. 


4. By now, the macaroni should be cooked and soft (Not very soft but soft). Drain the macaroni and add to the sauce. Give it a good mix so that the sauce is nicely coated to the macaroni. Cover the lid for 2 mins keeping the flame low. Check for seasonings and add salt and few more herbs and chili flakes according to your taste.


5. You can also sprinkle cheese on top to make it cheesy and creamy. It should be served hot or warm.
